Ingredients
  

  • 0.45 kg ground beef
  • 1.0 small onion, diced
  • 2.0 cloves garlic, minced
  • 1.25 oz taco seasoning
  • 1.0 cup salsa
  • 0.425 kg black beans, drained and rinsed
  • 1.0 cup corn
  • 1.0 cup cooked rice
  • 2.0 cups shredded cheddar cheese
  • 1.0 cup crushed tortilla chips
  • 0.25 cup chopped fresh cilantro
  • 0.5 cup sour cream

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Brown the Ground Beef: In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain any excess fat.
  • Season the Beef: Stir in the taco seasoning, salsa, black beans, and corn. Let it simmer for about 5 more minutes until everything is well combined and heated through.
  • Combine with Rice: In a large bowl, mix the cooked rice with the beef mixture until evenly incorporated.
  • Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the beef and rice mixture at the bottom. Add half of the shredded cheddar cheese on top.
  • Add More Layers: Top the cheese with the remaining beef and rice mixture, then sprinkle the rest of the cheese evenly over the top. Finally, add the crushed tortilla chips as a crunchy topping.
  • Bake the Casserole: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  • Garnish: Once done, take the casserole out of the oven and let it sit for 5 minutes. Sprinkle with fresh cilantro before serving.
