6 large eggs

1 cup shredded sharp cheddar cheese

1/2 cup diced roasted hatch green chiles (canned or fresh, peeled)

1/4 cup diced onion

1/4 cup diced bell pepper (any color)

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh cilantro, chopped (for garnish, optional)

Cooking spray or oil for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Muffin Tin: Lightly grease a 12-cup muffin tin with cooking spray or a light coat of oil to prevent sticking.

      Mix the Ingredients: In a large mixing bowl, crack the eggs and whisk until frothy. Add the shredded cheddar cheese, diced hatch chiles, diced onion, diced bell pepper, garlic powder, cumin, salt, and black pepper. Mix everything together until well combined.

        Pour into Muffin Cups: Evenly distribute the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and the tops are slightly golden. A toothpick inserted in the center should come out clean.

            Cool and Serve: Once done, remove the muffin tin from the oven and let it cool for a few minutes. Use a butter knife or a small spatula to gently loosen the muffin cups from the tin.

              Garnish: If desired, sprinkle with fresh chopped cilantro before serving.
