2 cloves garlic, minced

2 medium Yukon Gold potatoes, diced

3 cups vegetable broth (or chicken broth for non-vegetarians)

1 cup heavy cream (or coconut cream for a dairy-free option)

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil or unsalted butter

1 cup diced bell peppers (any color)

½ cup chopped fresh parsley or chives, for garnish

Optional: 1 cup cooked, crumbled bacon (for non-vegetarians)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil (or butter) over medium heat. Add the chopped onion and bell peppers; sauté until the onion becomes translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Corn and Potatoes: Mix in the corn kernels and diced potatoes, stirring to combine with the sautéed vegetables.

      Pour in Broth: Slowly add the vegetable broth, followed by dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Simmer for about 15-20 minutes, or until the potatoes are tender.

        Blend Creamy Base: Use an immersion blender to puree about 1/3 of the corn and potato mixture directly in the pot to create a creamy texture while keeping some whole pieces for a rustic feel. Alternatively, you can transfer the mixture to a regular blender in batches and then return it to the pot.

          Stir in Cream: Stir in the heavy cream (or coconut cream) and let the chowder simmer for an additional 5 minutes. Adjust seasoning with more salt and pepper if necessary.
