Instructions

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, paprika, salt, and black pepper. Add the chicken strips, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 1 hour or up to overnight to allow flavors to meld.

Prepare the Breading Stations: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Set up three shallow bowls:

      - In the first bowl, place the all-purpose flour.

        - In the second bowl, crack the egg and beat it with a fork.

          - In the third bowl, combine panko breadcrumbs, oregano, paprika, and cayenne pepper (if using).

Bread the Chicken: Remove the marinated chicken from the fridge. First, dredge each strip in the flour, shaking off excess. Next, dip it in the egg wash, and finally coat it with the panko breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure they adhere well.

Bake the Tenders: Place the breaded chicken tenders on the prepared baking sheet. Spray or drizzle a little olive oil on top of each tender to help them crisp up in the oven. Bake for 15-20 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Prepare the Honey Mustard Dipping Sauce: While the chicken is baking, in a small bowl, whisk together mayo, honey, Dijon mustard, apple cider vinegar, salt, and pepper until smooth. Adjust seasoning to taste.

Serve: Once the chicken tenders are crispy and golden, remove them from the oven and let them cool slightly. Serve warm with the honey mustard dipping sauce on the side.
