Crispy Chickpea Salad with Avocado Dressing

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

Salt and black pepper, to taste

4 cups mixed greens (spinach, arugula, and kale)

1 medium cucumber, diced

1 cup cherry tomatoes, halved

½ red onion, thinly sliced

¼ cup feta cheese, crumbled (optional)

Fresh parsley, chopped, for garnish

For Avocado Dressing:

1 ripe avocado

2 tablespoons lemon juice (about 1 lemon)

1 tablespoon olive oil

2 garlic cloves, minced

Salt and pepper, to taste

Water, as needed for consistency

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). On a baking sheet, spread the rinsed chickpeas and drizzle with 2 tablespoons of olive oil, smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.

    Bake: Roast the chickpeas in the oven for 25-30 minutes, stirring halfway through, until they are golden and crispy. Keep an eye on them towards the end to prevent burning.

      Make the Avocado Dressing: While the chickpeas are baking, scoop the avocado into a blender or food processor. Add the lemon juice, olive oil, minced garlic, salt, and pepper. Blend until smooth, adding water a tablespoon at a time until you reach your desired dressing consistency.

        Prep the Salad Base: In a large bowl, combine the mixed greens, diced cucumber, cherry tomatoes, and sliced red onion.
