1 lb (450g) ground beef

1 can (15 oz) black beans, rinsed and drained

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil

Optional toppings: sour cream, salsa, and sliced jalapeños

Instructions
 

Cook the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion is translucent.

    Brown the Meat: Add the ground beef to the skillet. Season with chili powder, cumin, salt, and pepper. Cook until the beef is browned and no longer pink, breaking it up with a spatula as it cooks, about 5-7 minutes.

      Mix in Beans: Once the beef is cooked, stir in the black beans and let everything simmer together for another 2-3 minutes, allowing the flavors to meld. Remove from heat.

        Assemble Quesadillas: Place a tortilla in another skillet over medium heat. Sprinkle half of the tortilla with a mix of both cheeses (cheddar and Monterey Jack), then top with a generous portion of the beef and bean mixture. Sprinkle more cheese on top and fold the tortilla in half.

          Cook Quesadillas: Cook for about 2-3 minutes on each side, or until the cheese melts and the tortilla is golden and crispy. Repeat with the remaining tortillas.

            Serve: Once all quesadillas are cooked, slice into wedges and serve warm with your favorite toppings like sour cream, salsa, and sliced jalapeños.
