Easy Beef and Vegetable Stir-Fry Bowls

Ingredients
  

1 lb (450g) beef sirloin, thinly sliced

2 cups broccoli florets

1 bell pepper (red or yellow), sliced into strips

1 medium carrot, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 tablespoon cornstarch

¼ cup beef broth (or water)

Cooked rice or quinoa, for serving

Optional: toasted sesame seeds and sliced green onions for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the thinly sliced beef with soy sauce, oyster sauce, sesame oil, and cornstarch. Toss until evenly coated. Let it marinate for about 15-20 minutes while you prepare the vegetables.

    Prepare Vegetables: While the beef is marinating, wash and chop all the vegetables: cut the broccoli into florets, slice the bell pepper, julienne the carrot, and trim the snap peas. Set aside.

      Stir-Fry the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated beef. Stir-fry for about 3-4 minutes until it’s browned and just cooked through. Remove the beef from the skillet and set aside.

        Cook the Veggies: In the same skillet, add a splash more oil if necessary. Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant. Then, add the broccoli, bell pepper, carrot, and snap peas. Continue to stir-fry for 4-5 minutes until the vegetables are tender-crisp.

          Combine Everything: Return the cooked beef to the skillet with the vegetables. Pour in the beef broth (or water) and toss everything together. Stir-fry for an additional 1-2 minutes to heat through and allow flavors to meld.
