Ingredients
  

1 cup cooked macaroni pasta (elbow or shells)

6 large eggs

1 cup milk

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil or butter

1 cup chopped vegetables (e.g., bell peppers, spinach, or zucchini)

Optional: 1/4 teaspoon paprika or chili powder for a kick

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Eggs: In a large bowl, whisk together the eggs and milk until well combined. Stir in the garlic powder, onion powder, salt, and pepper. Set aside.

      Sauté the Vegetables: In a large oven-safe skillet, heat olive oil or butter over medium heat. Add the chopped vegetables of your choice and sauté for about 3-4 minutes or until they are softened.

        Combine Ingredients: Stir the cooked macaroni and half of the shredded cheddar cheese into the skillet with the sautéed vegetables. Mix until everything is evenly distributed.

          Add Egg Mixture: Pour the egg mixture over the macaroni and vegetables in the skillet. Gently stir to ensure everything is evenly coated.

            Layer the Cheese: Sprinkle the remaining shredded cheddar cheese and Parmesan cheese evenly over the top.

              Bake: Transfer the skillet to the preheated oven and bake for about 25-30 minutes or until the frittata is set in the middle and lightly golden on top.

                Cool and Serve: Once cooked, allow the frittata to cool for a few minutes. Slice it into wedges and serve warm. It can also be enjoyed at room temperature!
