Ingredients

For the Cookie Crust:

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (optional, for consistency)

For the Fruit Topping:

1 cup strawberries, sliced

1 cup kiwis, peeled and sliced

1 cup blueberries

1 cup bananas, sliced

1 cup mandarin oranges, drained

Fresh mint leaves for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Make the Cookie Crust:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Beat in the eggs one at a time, followed by the vanilla extract.

          - In a separate bowl, whisk together the flour, baking powder, and salt.

            - Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

              - Spread the cookie dough into an even layer on the prepared baking sheet. Bake for about 12-15 minutes or until the edges are golden and the center is set. Remove from oven and let cool completely.

                Prepare the Cream Cheese Frosting:

                  - In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. If the frosting is too thick, add a tablespoon of milk to reach desired consistency.

                    Assemble the Fruit Pizza:

                      - Once the cookie crust is completely cooled, spread the cream cheese frosting evenly over the top.

                        - Arrange the sliced strawberries, kiwis, blueberries, bananas, and mandarin oranges in a colorful pattern over the frosting.

                          - Garnish with fresh mint leaves if desired.

                            Chill and Serve:

                              - Refrigerate the assembled fruit pizza for about 30 minutes before slicing into squares or wedges. This will help the layers set and enhance the flavors.

Enjoy! Slice, serve, and enjoy your refreshing fruity fiesta pizza!
