4 large russet potatoes

6 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 1/2 cups shredded mozzarella cheese

1 cup cooked and crumbled bacon

1/2 cup sour cream

1/4 cup chopped fresh chives

2 tbsp olive oil

1 tsp smoked paprika

Salt and pepper to taste

Optional: pickled jalapeños for a spicy kick

Prepare the Potatoes:

    Start by preheating your oven to 425°F (220°C). Wash and scrub the russet potatoes thoroughly. Cut them into thin fries (about 1/4 inch thick) to ensure crispy edges.

      Soak the Fries:

        Place the cut potatoes in a large bowl and soak them in cold water for at least 30 minutes. This step helps remove excess starch for extra crispiness.

          Par-Cook the Fries:

            After soaking, drain and rinse the fries well. Pat them dry with a kitchen towel. In a mixing bowl, toss the fries with olive oil, smoked paprika, salt, and pepper until evenly coated.

              Bake Them:

                Spread the fries in a single layer on a parchment-lined baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

                  Sauté the Garlic:
