1 cup uncooked long-grain rice

2 cups vegetable broth or chicken broth

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded cheddar cheese (more for topping, if desired)

1 cup milk (whole or low-fat)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon salt (or to taste)

1 tablespoon olive oil

½ teaspoon crushed red pepper flakes (optional)

Instructions
 

Prepare the Base: In a large skillet or a deep-sided pan, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Combine Rice and Broth: Add the uncooked rice to the skillet, followed by the vegetable or chicken broth. Stir to combine all the ingredients. Increase the heat and bring the mixture to a boil.

      Add Spices and Broccoli: Once boiling, reduce the heat to low and mix in the onion powder, garlic powder, black pepper, and salt. Add the broccoli florets to the mixture, covering the skillet with a lid afterwards.

        Cook Until Tender: Allow the mixture to simmer on low heat for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.

          Make it Cheesy: When the rice is cooked, reduce the heat to low. Pour in the milk and add the shredded cheddar cheese, stirring until the cheese melts and the casserole is creamy. If you want an extra cheesy top, sprinkle an additional layer of cheese over the mixture.
