4 boneless, skinless chicken breasts

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper, to taste

2 cups broccoli florets

1 cup baby carrots, halved

1 red bell pepper, sliced

1 medium red onion, cut into wedges

Fresh parsley, chopped for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Marinade: In a mixing bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, dried thyme, salt, and pepper until well combined.

      Marinate the Chicken: Place the chicken breasts in a large resealable bag or a shallow dish. Pour half of the honey mustard mixture over them, ensuring they are evenly coated. Allow to marinate for at least 15 minutes while you prepare the vegetables.

        Prepare the Veggies: In a bowl, toss the broccoli, carrots, red bell pepper, and red onion with the remaining half of the honey mustard mixture until well coated.

          Arrange on Sheet Pan: Lay the marinated chicken breasts in the center of the prepared sheet pan. Arrange the seasoned vegetables around the chicken, making sure everything is in a single layer for even cooking.

            Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and slightly caramelized.
