8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 lemon, zested and juiced

1/2 teaspoon red pepper flakes (optional)

1/2 cup cherry tomatoes, halved

1/4 cup freshly chopped parsley

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Cook the Pasta: In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.

    Sauté the Shrimp: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned. Then, add the shrimp, red pepper flakes (if using), salt, and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Combine the Ingredients: In the same skillet, add the cherry tomatoes and sauté them for 1-2 minutes until they start to soften. Pour in the lemon juice and zest, stirring to combine.

        Toss the Pasta: Add the drained pasta directly to the skillet with the tomatoes. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is achieved. Return the cooked shrimp to the pan and toss to combine all ingredients.

          Finish and Serve: Remove from heat and stir in the chopped parsley. Taste and adjust seasoning with more salt and pepper if needed. Serve immediately, topped with grated Parmesan cheese.
