Savory Ground Turkey and Sweet Potato Skillet

1 lb ground turkey

1 large sweet potato, peeled and diced into 1/2-inch cubes

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (canned or frozen)

1 cup black beans, drained and rinsed (optional)

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder

Salt and pepper, to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare Ingredients: Start by peeling and dicing the sweet potato, dicing the onion, and mincing the garlic. Set everything aside.

    Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season with a pinch of salt, and sauté for about 8-10 minutes or until they are tender and start to brown. Stir occasionally to prevent sticking. Remove sweet potatoes from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and red bell pepper; sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute, until fragrant.

        Cook Ground Turkey: Push the vegetables to one side of the skillet and add the ground turkey to the empty side. Season with salt, pepper, smoked paprika, cumin, and chili powder. Cook for about 5-7 minutes, stirring occasionally until the turkey is browned and cooked through.

          Combine Ingredients: Once the turkey is cooked, add the sautéed sweet potatoes back into the skillet along with the corn and black beans if using. Stir everything together and cook for an additional 2-3 minutes until heated through.

            Taste and Adjust Seasoning: Taste the mixture and adjust the seasoning if necessary, adding more salt, pepper, or spices as desired.

              Serve: Remove from heat. Garnish with fresh cilantro or parsley if desired and serve warm with lime wedges on the side for an extra zesty flavor.
