Savory Oktoberfest Bratwurst Skillet

4 bratwurst sausages

2 tablespoons olive oil

1 medium onion, sliced

2 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup sauerkraut, drained

1 medium potato, diced (about 1 cup)

1 teaspoon caraway seeds

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup beer (preferably a German lager or Märzen)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Bratwurst: Start by pre-cooking the bratwurst. In a large skillet over medium heat, add the bratwurst and enough water to cover them halfway. Bring it to a simmer and let it cook for about 10 minutes until they’re fully cooked through. Remove from water and let them cool slightly, then slice into bite-sized pieces.

    Sauté the Vegetables: In the same skillet, add the olive oil over medium heat. Once heated, add the sliced onion, and cook for about 5 minutes until they soften and begin to caramelize. Stir in the garlic, red and yellow bell peppers, and continue sautéing for another 5 minutes until they soften.

      Combine Ingredients: Once the vegetables are tender, stir in the diced potato, caraway seeds, and smoked paprika. Season with salt and pepper. Cook for about 3 minutes, stirring occasionally.

        Add Beer and Sauerkraut: Pour the beer into the skillet and bring it to a gentle simmer. Let it bubble for about 5 minutes to allow the flavors to meld together.

          Mix in the Bratwurst and Sauerkraut: Add the sliced bratwurst and drained sauerkraut to the skillet. Stir everything together and cook for another 10 minutes, or until the potatoes are tender and the entire mixture is heated through.

            Serve: Once everything is cooked, garnish with freshly chopped parsley. Serve hot, ideally with some fresh crusty bread or pretzels on the side for extra Oktoberfest flair!
