Ingredients
  

  • 4.0 medium russet potatoes
  • 1.0 tablespoon olive oil
  • 1.0 teaspoon smoked paprika
  • 1.0 teaspoon garlic powder
  • 1.0 teaspoon onion powder
  • 1.0 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • None to taste salt and black pepper
  • 1.0 cup shredded cheddar cheese
  • 0.5 cup cooked black beans
  • 1.0 small jalapeño
  • 0.25 cup fresh cilantro
  • 0.25 cup sour cream or Greek yogurt
  • None as desired salsa

Instructions
 

  • Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and let it preheat for about 5 minutes.
  • Prepare the Potatoes: Slice the peeled potatoes into 0.25-inch thick rounds. Place the rounds in a large bowl.
  • Season the Potatoes: Drizzle the olive oil over the potato slices. Add the smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and black pepper. Toss everything together to ensure all potato rounds are evenly coated with the seasoning mix.
  • Air Fry the Potatoes: Arrange a single layer of potato slices in the air fryer basket (you may need to do this in batches). Air fry for 10 minutes, then flip the slices halfway through to ensure even cooking. They should be golden and crisp at the edges. Once done, remove from the air fryer and set aside.
  • Assemble the Stackers: On a heatproof plate or the air fryer basket, stack 4-5 potato slices. Sprinkle a layer of cheddar cheese on top, followed by some black beans, and a jalapeño slice if using. Repeat this layering process until all ingredients are used (you can typically get 2-3 stacks depending on how large you make them).
  • Melt the Cheese: Place the stacked potato rounds back in the air fryer and cook for an additional 4-5 minutes at 375°F (190°C), or until the cheese is melted and bubbly.
  • Garnish and Serve: Carefully remove the potato stackers from the air fryer. Top with fresh cilantro and serve with sour cream or Greek yogurt and salsa on the side.
