4 salmon fillets (about 6 oz each)

1/4 cup honey

1/4 cup soy sauce (low sodium)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening the sauce)

2 cups cooked jasmine rice (or quinoa for a healthier option)

1 cup broccoli florets (steamed)

1 cup shredded carrots

1 ripe avocado, sliced

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Marinate the Salmon: In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger, sesame oil, and rice vinegar. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Cook the Salmon: Preheat your oven to 400°F (200°C). Remove the salmon from the marinade and place it on a lined baking sheet. Save the marinade for later. Bake the salmon in the preheated oven for about 12-15 minutes, or until it flakes easily with a fork.
