Prepare the Marinade: In a medium bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and pepper. Whisk together until well mixed.
Marinate the Chicken: Pat the chicken thighs dry with paper towels. Place them in a large resealable plastic bag or a dish and pour the marinade over them. Ensure each thigh is well-coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C). Allow it to heat for about 5 minutes.
Arrange the Chicken: Once marinated, take the chicken out of the bag and allow any excess marinade to drip off. Place the chicken thighs skin-side down in the air fryer basket. Make sure they are not overcrowded to ensure even cooking.
Cook the Chicken: Air fry the chicken thighs at 400°F (200°C) for 10 minutes. After 10 minutes, flip them over so the skin side is facing up. Continue to cook for an additional 10-15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
Rest and Garnish: Once done, carefully remove the chicken thighs from the air fryer and let them rest for 5 minutes. Garnish with freshly chopped parsley if desired.
Serve: Serve hot with your favorite sides, such as steamed vegetables or a simple salad.
