8 oz spaghetti or fettuccine

2 tbsp olive oil

1 medium zucchini, sliced

1 bell pepper (red, yellow, or orange), sliced

1 cup cherry tomatoes, halved

1 cup broccoli florets

2 cloves garlic, minced

1 tsp dried Italian herbs (oregano, basil, or thyme)

Salt and pepper, to taste

1/4 cup freshly grated Parmesan cheese (optional)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the zucchini and bell pepper. Sauté for about 3-4 minutes until they begin to soften.

      Add More Veggies: Stir in the cherry tomatoes and broccoli florets. Continue to sauté for another 3 minutes until the tomatoes are slightly blistered and the broccoli is bright green.

        Flavor It Up: Add the minced garlic and dried Italian herbs to the skillet. Season with salt and pepper to taste. Cook for an additional minute until fragrant.

          Combine: Add the drained pasta to the skillet with the vegetables. If the mixture seems dry, pour in some of the reserved pasta water to help create a light sauce. Toss well to combine and heat through for about 1-2 minutes.

            Serve: Remove from heat. If desired, sprinkle freshly grated Parmesan cheese over the top, and garnish with fresh basil leaves. Serve hot and enjoy!
