The ketogenic diet, often referred to as keto, is centered around drastically reducing carbohydrate intake and replacing it with healthy fats. This shift in macronutrient composition puts your body into a metabolic state known as ketosis, where it becomes incredibly efficient at burning fat for energy. While this dietary approach offers numerous benefits—including weight loss, improved blood sugar control, and increased mental clarity—one of the biggest challenges for many adherents is the dessert dilemma.

Ingredients

2 tablespoons almond flour

1 tablespoon unsweetened cocoa powder

1 tablespoon erythritol (or your preferred keto sweetener)

1/4 teaspoon baking powder

1 large egg

2 tablespoons unsweetened almond milk (or any low-carb milk)

1 tablespoon melted coconut oil (or butter)

1/2 teaspoon vanilla extract

A pinch of salt

Optional: sugar-free chocolate chips or chopped nuts for extra flavor

Instructions

In a microwave-safe mug, combine the almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well to ensure there are no lumps.

Add the egg, almond milk, melted coconut oil, and vanilla extract to the dry ingredients. Stir until you have a smooth batter.

If desired, fold in the sugar-free chocolate chips or nuts for added texture and flavor.

Microwave on high for 60-90 seconds. Start with 60 seconds and check for doneness— the cake should be set but still slightly moist.

Let the mug cake cool for a minute before enjoying it directly from the mug. For an extra treat, top with whipped cream or a dollop of almond butter.
