1 pound (450g) chicken breast, diced into bite-sized pieces

1 cup plain yogurt

2 tablespoons garam masala

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon turmeric

1 teaspoon paprika

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch ginger, grated

1 can (14 oz) crushed tomatoes

1 cup coconut milk

Salt, to taste

Fresh cilantro, for garnish

Cooked basmati rice or naan (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken breast, yogurt, garam masala, cumin, coriander, turmeric, and paprika. Ensure the chicken is well-coated. Let it marinate for 10 minutes while you prepare the other ingredients.

    Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add Aromatics: Stir in the minced garlic and grated ginger. Cook for an additional minute until fragrant.

        Cook the Chicken: Add the marinated chicken (along with any leftover marinade) to the skillet. Sauté for about 5-6 minutes until the chicken is browned on all sides.
