1 pound (450g) boneless, skinless chicken breasts, diced

1 cup (200g) long-grain white rice, rinsed

3 cups (720ml) low-sodium chicken broth

1 cup (240ml) milk

1 cup (120g) shredded cheddar cheese

1 cup (100g) frozen mixed vegetables (peas, carrots, corn)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven: Set your oven to 350°F (175°C) to preheat it while you prepare the casserole.

    Cook the chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with garlic powder, onion powder, salt, and pepper. Sauté the chicken for about 5 minutes or until it's browned on all sides but not fully cooked through.

      Add rice and broth: Stir in the rinsed rice, followed by the chicken broth and milk. Bring the mixture to a gentle simmer, stirring occasionally. Once it reaches a simmer, reduce the heat and cover the skillet. Cook for 10 minutes, allowing the rice to absorb some of the liquid.

        Mix in veggies and cheese: After 10 minutes, add the frozen mixed vegetables directly into the skillet, stirring to combine. Sprinkle ¾ cup of the shredded cheddar cheese over the top (reserve the remaining cheese for later). Stir gently just to incorporate the cheese, creating a creamy consistency.

          Bake the casserole: Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 10-12 minutes, or until the rice is tender and the liquid is fully absorbed.

            Add the final cheese layer: Remove the skillet from the oven, uncover, and sprinkle the reserved cheddar cheese on top. Return it to the oven uncovered for an additional 2-3 minutes or until the cheese is melted and bubbly.

              Garnish and serve: Remove the casserole from the oven and let it sit for about 5 minutes. Garnish with chopped fresh parsley before serving!
