1 pound boneless skinless chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko or regular)

1/4 cup all-purpose flour

1/2 cup buffalo sauce (adjust to taste)

Cooking spray

Fresh celery sticks and blue cheese dressing for serving (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken pieces and coat thoroughly. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Coating: In a separate shallow bowl, mix together the breadcrumbs and flour.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

        Coat the Chicken: Remove chicken pieces from the buttermilk marinade, allowing excess to drip off. Dredge each piece into the breadcrumb-flour mixture, pressing gently to adhere the coating.

          Arrange in the Air Fryer: Lightly spray the air fryer basket with cooking spray. Place the coated chicken bites in a single layer (you might need to do this in batches to avoid overcrowding).

            Cooking Time: Spray the tops of the chicken bites lightly with cooking spray. Cook in the air fryer for 12-15 minutes, flipping halfway through, until golden brown and crispy. The internal temperature should reach 165°F (74°C).

              Toss in Buffalo Sauce: Once the chicken bites are cooked, place them in a mixing bowl and pour the buffalo sauce over them. Toss gently to coat evenly in the sauce.

                Serve: Serve hot with celery sticks and blue cheese dressing on the side for dipping.
