Ingredients
  

1 pound ground beef

1 cup shredded cheddar cheese

1/2 cup diced onions

1/2 cup diced pickles

1 tablespoon ketchup

1 tablespoon mustard

Salt and pepper to taste

12 egg roll wrappers

Cooking spray or oil for brushing

Optional: additional pickles and ketchup for serving

Instructions
 

Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Season with salt and pepper to taste. Drain any excess grease.

    Combine Ingredients: In a large bowl, combine the cooked beef, shredded cheddar cheese, diced onions, diced pickles, ketchup, and mustard. Mix everything together well until the cheese starts to melt from the warmth of the beef.

      Prepare Egg Rolls: Lay an egg roll wrapper on a clean, flat surface, with one corner pointing towards you (like a diamond shape). Spoon about 2 tablespoons of the cheeseburger mixture onto the center of the wrapper.

        Roll and Seal: Fold the bottom corner over the filling, tucking it snugly as you go. Fold in the sides and then roll up tightly, sealing the top corner with a little water. Repeat with remaining wrappers and filling.

          Preheat Air Fryer: Preheat your air fryer to 390°F (200°C) for about 5 minutes.

            Air Fry the Egg Rolls: Lightly spray each egg roll with cooking spray or brush with oil to ensure a crispy texture. Arrange the egg rolls in a single layer in the air fryer basket, making sure they are not touching each other. You may need to do this in batches.

              Cook: Air fry for 8-10 minutes or until golden brown and crispy, turning halfway through for even cooking.

                Serve: Carefully remove the egg rolls from the air fryer. Serve hot with additional pickles and ketchup for dipping.
