Air Fryer Coconut Tofu Bites

1 block (14 oz) firm tofu, drained and pressed

1/2 cup shredded unsweetened coconut

1/4 cup cornstarch

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup soy sauce (or tamari for gluten-free)

1 tablespoon maple syrup

1 tablespoon lime juice

Instructions
 

Prepare the Tofu: After draining and pressing the tofu to remove excess moisture, cut the block into bite-sized cubes, around 1-inch in size.

    Make the Marinade: In a mixing bowl, combine soy sauce, maple syrup, and lime juice. Whisk until well mixed. Add the cubed tofu and gently toss to coat. Allow the tofu to marinate for at least 30 minutes to absorb the flavors. If time allows, marinate longer for enhanced taste.

      Prepare the Coating: In a separate bowl, mix together the shredded coconut, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper until evenly combined.

        Coat the Tofu: After marinating, take each tofu piece and roll it in the coconut mixture, making sure it is evenly coated. Press gently to help the coating stick.

          Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

            Air Fry the Tofu Bites: Lightly spray the air fryer basket with cooking spray or brush with olive oil. Place the coated tofu bites in a single layer in the basket, making sure they’re not overcrowded (you may need to cook in batches). Spray the tops of the tofu with a little oil for extra crispiness.

              Cook: Air fry for about 15-18 minutes, shaking the basket halfway through the cooking time to ensure even crisping. The tofu should turn a golden color and be crispy on the outside.

                Serve: Remove the tofu bites from the air fryer and let them cool slightly. Serve warm with your favorite dipping sauce (like sweet chili sauce or soy sauce) and enjoy!
