Ingredients

1 pound large shrimp, peeled and deveined

1 cup unsweetened shredded coconut

1/2 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or oil for spraying

Instructions

Prep the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. This helps them get crispy.

Set Up Dipping Stations: In one shallow bowl, place the all-purpose flour. In another bowl, whisk together the beaten eggs. In a third bowl, combine shredded coconut, panko breadcrumbs, garlic powder, paprika, salt, and black pepper. Mix well.

Coat the Shrimp: Dip each shrimp first into the flour, coating evenly and shaking off the excess. Then, dip into the beaten eggs, letting any excess drip off. Finally, roll the shrimp in the coconut-panko mixture until fully coated. Place the coated shrimp on a plate.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes, allowing it to reach the right temperature for crispy results.

Air Fry the Shrimp: Lightly spray the air fryer basket with cooking spray or lightly coat with oil. Place the shrimp in a single layer in the basket, making sure they aren’t crowded (you may need to do this in batches). Spray the tops of the shrimp lightly with cooking spray for an extra crunch.

Cook: Air fry the shrimp for 8-10 minutes, flipping halfway through, until they are golden brown and crispy. Check for doneness; the shrimp should be opaque and succulent.

Serve: Remove the shrimp from the air fryer and let them cool slightly. Serve hot with sweet chili sauce, pineapple salsa, or your favorite dipping sauce. Enjoy your tropical delight!
