Air Fryer Eggplant Parmesan Rounds

Ingredients
  

1 medium eggplant

1 cup breadcrumbs (preferably Italian-style)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp dried oregano

1 tsp dried basil

¼ tsp salt

¼ tsp black pepper

2 large eggs

1 cup marinara sauce (for serving)

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish)

Instructions
 

Prepare the Eggplant:

    - Slice the eggplant into ½-inch thick rounds. Lay the slices on a clean kitchen towel and sprinkle with salt. Let them sit for about 30 minutes to draw out excess moisture and bitterness. After 30 minutes, rinse and pat dry with paper towels.

      Make the Breading Station:

        - In one bowl, beat the eggs until fully combined. In another bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, basil, salt, and pepper.

          Coat the Eggplant:

            - Dip each eggplant round into the beaten eggs, allowing the excess to drip off. Then coat them in the breadcrumb mixture, pressing gently to ensure an even coating. Set aside on a plate.

              Preheat the Air Fryer:

                - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                  Air Fry the Eggplant:

                    - Place the coated eggplant rounds in a single layer in the air fryer basket, working in batches if necessary. Lightly spray the tops with cooking spray for added crispiness. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.

                      Layer with Sauce and Cheese:

                        - Once the rounds are done, carefully remove them and place half of them on a baking dish or a parchment-lined tray. Spoon a little marinara sauce on top of each round, followed by a sprinkle of mozzarella cheese. Add the remaining rounds, repeat with more sauce and cheese on top.

                          Broil (Optional):

                            - For extra melted cheese, you can also place the baking dish under the broiler in your oven for 2-3 minutes, watching closely to avoid burning.

                              Serve:

                                - Remove from the oven, garnish with fresh basil leaves, and serve immediately with extra marinara sauce on the side for dipping.
