2 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon Italian seasoning

Salt and pepper to taste

2 large eggs

1 tablespoon Dijon mustard

Olive oil spray or cooking spray

Prep the Chicken: If the chicken breasts are very thick, consider slicing them in half horizontally to ensure even cooking. Pat them dry with a paper towel and place them in a bowl.

    Create the Coating Mixture: In a shallow dish, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Prepare the Egg Wash: In another bowl, whisk the eggs with the Dijon mustard until well blended. This will act as the adhesive for the breadcrumb coating.

        Coat the Chicken: Dip each chicken breast into the egg wash, ensuring it is fully coated. Then, dredge it into the breadcrumb and Parmesan mixture, pressing gently to adhere the coating to the chicken.

          Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and preheat for about 5 minutes.

            Arrange in Air Fryer: Lightly spray the air fryer basket with olive oil spray. Place the coated chicken breasts in the basket in a single layer, making sure they do not touch to allow for even air circulation. You may need to work in batches.

              Cook the Chicken: Spray the tops of the chicken breasts lightly with olive oil spray for a golden finish. Cook for 10 minutes, then flip the chicken breasts and spray the other side with olive oil. Cook for an additional 5-7 minutes or until the internal temperature reaches 165°F (75°C) and the coating is golden brown.

                Rest and Serve: Once cooked, remove the chicken from the air fryer and let it rest for 5 minutes before slicing. This helps retain the juices. Serve with your favorite dipping sauces or alongside a fresh salad!
