Air Fryer Spaghetti Squash Fritters

2 cups cooked spaghetti squash (about 1 medium spaghetti squash)

1/2 cup breadcrumbs (or gluten-free breadcrumbs)

1/2 cup grated parmesan cheese (or nutritional yeast for a vegan option)

1/4 cup finely chopped green onions

1/4 cup grated carrots

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

Olive oil spray

Instructions
 

Prepare the Spaghetti Squash:

    - Preheat your oven or microwave to cook the spaghetti squash if you haven’t done so already. Cut the squash in half lengthwise, remove the seeds, and roast in the oven at 400°F (200°C) for 40-50 minutes or in the microwave for about 10-12 minutes until tender. Once cooked, use a fork to scrape out the strands of squash and allow it to cool.

      Mix the Ingredients:

        - In a large mixing bowl, combine the cooked spaghetti squash, breadcrumbs, parmesan cheese, green onions, grated carrots, eggs, garlic powder, onion powder, paprika, salt, and pepper. Mix until everything is well combined; the mixture should be thick and moldable.

          Form the Fritters:

            - Using your hands, form the mixture into small patties (about 2-3 inches in diameter). Make sure they are packed tightly so they hold together during cooking.

              Preheat the Air Fryer:

                - Preheat your air fryer to 370°F (190°C) for about 5 minutes.

                  Air Fry the Fritters:

                    - Lightly spray the air fryer basket with olive oil. Place the fritters in the basket in a single layer, making sure not to overcrowd them (you may need to do this in batches). Spray the tops of the fritters with a bit more olive oil.

                      Cook Until Golden:

                        - Air fry the fritters for 12-15 minutes, flipping them halfway through, until they are golden brown and crispy on the outside. Adjust the cook time slightly depending on your air fryer model.

                          Serve:

                            - Once cooked, remove the fritters from the air fryer and let them cool slightly before serving. Enjoy with your favorite dipping sauce, like marinara, ranch, or a tangy yogurt sauce!
