Air Fryer Sweet Potato Nacho Bites

2 medium sweet potatoes, peeled and sliced into 1/4 inch rounds

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 can black beans, rinsed and drained

1 medium avocado, diced

1/2 cup salsa

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prep the Sweet Potatoes: In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper until evenly coated.

    Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

      Air Fry the Sweet Potatoes: Arrange the sweet potato rounds in a single layer in the air fryer basket. Air fry for about 10-12 minutes, shaking the basket halfway through, until they are crispy and golden brown. You may need to do this in batches, depending on the size of your air fryer.

        Assemble the Nacho Bites: Once the sweet potato rounds are cooked, remove them from the air fryer and place them on a serving platter. Top each round with a sprinkle of shredded cheddar cheese and a spoonful of black beans.
