2 medium sweet potatoes (about 1 lb), peeled and diced

1 cup breadcrumbs (panko or gluten-free)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs, beaten (or flax egg for vegan option)

Olive oil spray (for misting)

Instructions
 

Prepare the Sweet Potatoes: In a pot of boiling water, add the diced sweet potatoes and cook for about 10 minutes, until fork-tender. Drain and allow to cool slightly.

    Mash the Sweet Potatoes: In a large mixing bowl, mash the cooked sweet potatoes until smooth. Let cool completely.

      Mix Ingredients: Add the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper to the bowl with the mashed sweet potatoes. Mix well until combined.

        Add Eggs: Incorporate the beaten eggs into the mixture (or flax egg) and stir until everything is thoroughly combined. If the mixture feels too wet, add a bit more breadcrumbs.

          Form the Nuggets: Using your hands, scoop out small portions of the mixture and shape them into nugget-sized bites (about 1.5 inches in diameter). Place them on a parchment-lined baking sheet.

            Preheat the Air Fryer: Preheat your air fryer to 380°F (193°C) for about 3-5 minutes.

              Air Fry the Nuggets: Lightly mist the air fryer basket with olive oil spray. Place the nugget bites in a single layer in the basket (you may need to do this in batches). Mist the top of the nuggets with olive oil spray.

                Cooking Time: Air fry the sweet potato nuggets for 12-15 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
