Air Fryer Taco Mac and Cheese Balls

2 cups cooked macaroni pasta

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup taco seasoned ground beef (cooked) or black beans for a vegetarian option

½ cup diced tomatoes (drained)

¼ cup diced onion

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

½ teaspoon paprika

Salt and pepper, to taste

1 cup breadcrumbs (panko preferred)

2 large eggs (beaten)

Cooking spray or olive oil spray

Instructions
 

Combine Ingredients: In a large mixing bowl, combine the cooked macaroni, cheddar cheese, Monterey Jack cheese, ground beef (or beans), diced tomatoes, diced onion, garlic powder, onion powder, chili powder, paprika, salt, and pepper. Mix until well combined.

    Form the Balls: Using your hands, take a small handful of the mixture and roll it into a ball about the size of a golf ball. Repeat until all the mixture is formed into balls. You should have around 12-15 balls.

      Set Up Breading Station: In one bowl, place the breadcrumbs. In another bowl, add the beaten eggs.

        Coat the Balls: Dip each mac and cheese ball into the egg, allowing any excess to drip off, then roll it in the breadcrumbs to coat completely. Place the coated balls on a plate.

          Preheat Air Fryer: Preheat your air fryer to 370°F (188°C) for about 5 minutes.

            Air Fry the Balls: Lightly spray the air fryer basket with cooking spray. Place the mac and cheese balls in a single layer in the basket, making sure they are not touching (you may need to do this in batches). Spray the tops with a bit of cooking spray.

              Cook Until Golden: Air fry for about 8-10 minutes or until the balls are golden brown and crispy, shaking the basket halfway through for even cooking.

                Serve and Enjoy: Remove the mac and cheese balls from the air fryer and let them cool slightly before serving. Pair with your favorite dipping sauce, such as salsa or ranch dressing!
