Ingredients

1 cup almond butter (smooth or crunchy)

1/2 cup rolled oats

1/4 cup honey or maple syrup

1/4 cup vanilla protein powder (or your favorite flavor)

1/4 cup dark chocolate chips (or cacao nibs)

1/4 cup shredded coconut (unsweetened)

1/4 cup chopped almonds (or any favorite nuts)

1/2 teaspoon vanilla extract

A pinch of sea salt

Instructions

Mix the Base: In a large mixing bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until smooth and creamy.

Add the Dry Ingredients: To the almond butter mixture, add the rolled oats, protein powder, shredded coconut, chopped almonds, and sea salt. Mix until all the ingredients are fully incorporated.

Fold in Chocolate: Gently fold in the dark chocolate chips or cacao nibs to the mixture to add a sweet, chocolatey burst in each bite.

Form the Bites: With clean hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the bites on a parchment-lined baking sheet.

Chill: Once all the protein bites are formed, refrigerate them for at least 30 minutes to firm up and help them hold their shape.

Serve & Store: Enjoy immediately or store the protein bites in an airtight container in the refrigerator for up to a week. They also freeze well for longer storage—just thaw before enjoying!
