1 cup almond flour

1/2 cup unsweetened shredded coconut

1/4 cup maple syrup

1 tsp vanilla extract

1/2 tsp almond extract

1/4 tsp sea salt

1/2 cup dark chocolate chips

1/4 cup whole almonds (for topping)

2 tbsp coconut oil (for melting chocolate)

Instructions
 

Preheat and Prepare: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, shredded coconut, and sea salt. Stir until evenly mixed.

      Add Wet Ingredients: In a separate bowl, mix together the maple syrup, vanilla extract, and almond extract. Pour this mixture into the dry ingredients and stir until well combined. The mixture should be sticky and hold together when pressed.

        Press into the Pan: Transfer the mixture into the prepared baking pan and press it down firmly and evenly using your hands or a spatula. Make sure it's packed tight.

          Bake: Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove from the oven and let it cool completely in the pan.

            Melt Chocolate: While the bars are cooling, melt the dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth and fully combined.

              Assemble Bars: Once the bars are cooled, pour the melted chocolate over the cooled coconut-almond mixture in the pan, spreading it evenly with a spatula. Gently press the whole almonds into the chocolate topping for that classic Almond Joy look.

                Chill and Cut: Refrigerate the bars for about 30 minutes, until the chocolate is set. Once set, lift the bars out of the pan using the parchment overhang and place on a cutting board. Cut into small squares or rectangles.

                  Serve and Enjoy: Serve immediately or store in an airtight container in the refrigerator for up to a week!
