Ingredients

4 large flour tortillas

2 medium Granny Smith apples, peeled and diced

1/4 cup brown sugar

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

1/4 cup raisins (optional)

1/2 cup chopped pecans or walnuts (optional)

1/4 cup butter, melted

1/2 cup powdered sugar

1 to 2 tablespoons milk (for glazing)

Instructions

Prepare the Apple Mixture: In a medium bowl, combine the diced apples, brown sugar, ground cinnamon, and vanilla extract. If using, add raisins and nuts. Mix well, ensuring apples are fully coated. Set aside to let flavors meld for about 10 minutes.

Assemble the Roll-Ups: Lay a tortilla flat on a clean surface. Spoon a generous amount of the apple mixture onto one edge of the tortilla. Roll the tortilla tightly, starting from the edge with the filling. Repeat this with the remaining tortillas and apple mixture.

Heat the Pan: In a large skillet, heat the melted butter over medium heat. Once the butter is sizzling, place the apple roll-ups seam-side down in the skillet. Cook for about 2-3 minutes, then carefully flip and cook for another 2-3 minutes until golden brown and crispy.

Prepare the Glaze: In a small bowl, whisk together the powdered sugar and milk until smooth and drizzle-able. Adjust the milk quantity for desired consistency.

Serve: Once roll-ups are golden brown, remove from skillet. Let cool for a minute, then drizzle with the glaze. Cut into bite-sized pieces or leave whole for serving. Enjoy warm with a side of vanilla ice cream or whipped cream for an extra treat!
