Ingredients

6 cups stale bread (such as brioche or challah), cut into 1-inch cubes

2 cups whole milk

1 cup heavy cream

3 large eggs

3/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

1 cup dried cranberries

1/2 cup chopped pecans or walnuts (optional)

2 tablespoons unsalted butter, melted

Powdered sugar, for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter.

Prepare the Bread: In a large mixing bowl, combine the bread cubes with melted butter. Toss to coat the bread, then set aside to allow the butter to soak in.

Mix Wet Ingredients: In another bowl, whisk together the whole milk, heavy cream, eggs, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

Combine Ingredients: Add the diced apples, dried cranberries, and nuts (if using) to the bowl with the bread. Pour the milk and egg mixture over the bread mixture, gently folding to ensure that all pieces of bread are soaked. Let this mixture sit for 15-20 minutes to absorb the flavors.

Bake the Pudding: Pour the bread mixture into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Once baked, remove the bread pudding from the oven and let it cool for about 10 minutes. Dust with powdered sugar before serving, if desired. This dish is lovely served warm, with a scoop of vanilla ice cream or a drizzle of caramel sauce.
