1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/2 cup powdered sugar (for topping)

Oil for frying (vegetable or canola)

Optional: additional cinnamon sugar for sprinkling

Prepare the Apples: In a mixing bowl, toss the diced apples with a sprinkle of cinnamon and a teaspoon of sugar. Set them aside to macerate while you prepare the batter.

    Make the Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. In a separate bowl, combine the milk, egg, and vanilla extract. Gradually mix the wet ingredients into the dry ingredients until just combined. Be careful not to overmix; a few lumps are okay.

      Fold in the Apples: Gently fold the diced apples into the batter until evenly distributed.
