1 cup all-purpose flour

2 tbsp sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup buttermilk (or milk + 1 tbsp vinegar)

1 large egg

2 tbsp melted butter

1 tsp vanilla extract

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 tsp cinnamon

1 tbsp lemon juice

1 tbsp brown sugar

Maple syrup or caramel sauce for drizzling (optional)

Whipped cream for serving (optional)

Instructions
 

Prepare the Apple Filling:

    - In a medium bowl, combine the diced apples, cinnamon, lemon juice, and brown sugar. Toss until the apples are well coated. Set aside to let the flavors meld.

      Make the Pancake Batter:

        - In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

          - In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

            - Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix; a few lumps are okay.

              Cook the Pancakes:

                - Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.

                  - Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look slightly dry (about 2-3 minutes). Flip and cook the other side until golden brown (about 1-2 minutes).

                    - Repeat with the remaining batter, keeping the finished pancakes warm on a plate.
