Ingredients

2 cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 1/2 cups buttermilk

2 large eggs

1/4 cup granulated sugar

1/4 cup melted butter

1 tsp vanilla extract

2 cups Granny Smith apples, peeled, cored, and thinly sliced

1/2 cup brown sugar

1 tsp cinnamon

1 tbsp lemon juice

1/4 cup walnuts or pecans, chopped (optional)

Powdered sugar for dusting

Whipped cream for serving (optional)

Instructions

Prepare the Apple Filling: In a medium bowl, combine the sliced apples, brown sugar, cinnamon, lemon juice, and nuts (if using). Toss well to coat and set aside to let the flavors meld for about 10-15 minutes.

Make the Waffle Batter: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, mix the buttermilk, eggs, granulated sugar, melted butter, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, mixing until just combined (it's okay if there are a few lumps).

Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with non-stick spray or oil.

Cook the Waffles: Pour enough batter onto the preheated waffle iron to cover the grid, close the lid, and cook until the waffles are golden brown and crisp (usually about 5 minutes, depending on your waffle iron). Carefully remove the waffles and repeat the process until you have enough waffles (this recipe makes about 4-6 waffles).

Cook the Apples: In a medium skillet over medium heat, add the apple mixture and cook for about 5-7 minutes, or until the apples are tender and caramelized, stirring occasionally.

Assemble the Sandwiches: Take one waffle and spoon a generous amount of the warm apple filling on top. Place another waffle on top to create a sandwich. Repeat with remaining waffles and apple filling.

Serve: Dust the assembled waffle sandwiches with powdered sugar and serve warm with a dollop of whipped cream if desired.
