2 cups red cabbage, finely shredded

1 cup green cabbage, finely shredded

1 cup carrots, julienned

1 cup cucumber, diced

1 bell pepper (red or yellow), diced

1/2 cup scallions (green onions), chopped

1/2 cup fresh cilantro, chopped

1/2 cup roasted peanuts or cashews, roughly chopped

1 avocado, diced

1 cup edamame (shelled, cooked)

1/4 cup sesame seeds (optional)

For the Dressing:

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, minced

1 teaspoon garlic, minced

Pinch of red pepper flakes (optional)

Instructions
 

Prepare the Veggies: In a large mixing bowl, combine the red cabbage, green cabbage, carrots, cucumber, bell pepper, scallions, and edamame. Toss to mix thoroughly.
