1 ripe avocado

1 cup plain Greek yogurt

1 cup fresh cilantro leaves, packed

1 garlic clove

Juice of 1 lime (about 2 tablespoons)

Salt to taste

4 large whole wheat tortillas

1 cup cooked quinoa (or rice for an alternative)

1 cup mixed salad greens (spinach, arugula, etc.)

1 cup cherry tomatoes, halved

1/2 cucumber, thinly sliced

Optional toppings: sliced jalapeños, feta cheese, or pumpkin seeds

Instructions
 

Prepare the Avocado Cilantro Sauce:

    - In a food processor, combine the ripe avocado, Greek yogurt, fresh cilantro, garlic clove, lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste, adding more lime juice or salt as needed. Set aside.

      Assemble the Wraps:

        - Warm the whole wheat tortillas in a dry skillet over medium heat for about 10-20 seconds on each side, just until pliable.

          - Lay a warm tortilla flat on a clean surface. Spread a generous amount of the avocado cilantro yogurt sauce over the entire surface.

            - In the center of the tortilla, layer a scoop of cooked quinoa, followed by a handful of mixed salad greens, a quarter of the cherry tomatoes, and a few slices of cucumber.

              - Optionally add jalapeños, feta cheese, or pumpkin seeds for extra flavor and crunch.

                Roll It Up:

                  - Fold the sides of the tortilla inward over the fillings, then roll it from the bottom up to secure all the ingredients. Repeat the process with the remaining tortillas.

                    Serve:
