6 large eggs

1 ripe avocado

4 slices of cooked bacon, crumbled (plus extra for garnish)

1 tablespoon mayonnaise

1 teaspoon Dijon mustard

1 tablespoon fresh lime juice

1/4 teaspoon garlic powder

Salt and pepper, to taste

Fresh chopped chives or cilantro, for garnish

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let the eggs sit for 12-14 minutes.

    Cool the Eggs: After the timer goes off, transfer the eggs to an ice bath (a bowl of ice water) to cool for about 5-10 minutes. This will help make peeling easier.

      Prepare the Filling: While the eggs are cooling, in a bowl, mash the ripe avocado with a fork until smooth. Add the mayonnaise, Dijon mustard, lime juice, garlic powder, and seasoning (salt and pepper) to the mashed avocado. Mix well to create a creamy filling.

        Crackle the Eggs: Once the eggs are cooled, gently tap them on a hard surface to crack the shell. Carefully peel the eggs under running water to help remove the shell more easily.
