Avocado Egg Breakfast Quesadilla

2 large eggs

1 ripe avocado, diced

1/2 cup shredded cheese (cheddar or Monterey Jack recommended)

2 large flour tortillas

1/4 cup diced tomatoes

1/4 cup black beans (canned, rinsed and drained)

1 tablespoon fresh cilantro, chopped (optional)

Salt and pepper, to taste

1 tablespoon olive oil or cooking spray

Scramble the Eggs: In a small bowl, whisk the eggs with salt and pepper. Heat a non-stick skillet over medium heat, add a bit of olive oil or cooking spray. Pour in the eggs, stirring gently until they are fully cooked but still soft. Remove from heat.

    Assemble the Quesadilla: On one tortilla, layer half of the scrambled eggs, followed by half of the diced avocado, half of the shredded cheese, diced tomatoes, black beans, and cilantro. Sprinkle a bit more cheese on top to help hold the quesadilla together.

      Top and Cook: Place the other tortilla on top, pressing down slightly. Wipe the skillet clean, then return it to medium heat. Carefully transfer the quesadilla to the skillet. Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and crispy.

        Flip and Finish: Carefully flip the quesadilla using a spatula. Cook the other side for another 3-4 minutes until it's golden and the cheese is melted.

          Slice and Serve: Remove the quesadilla from the skillet and let it cool for a minute. Cut it into wedges and serve with salsa, sour cream, or more avocado on the side for dipping!
