4 large eggs

1 ripe avocado

2 tablespoons Greek yogurt (or mayonnaise for a richer taste)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper, to taste

1 small red onion, finely chopped

1 stalk celery, finely diced

¼ cup fresh cilantro or parsley, chopped

4 large whole wheat tortillas

1 cup shredded cheddar cheese (or your favorite cheese)

Optional: sliced tomatoes or mixed greens for serving

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 10-12 minutes. Once cooked, transfer the eggs to an ice bath to cool.

    Prepare the Egg Salad: Once the eggs are cooled, peel and chop them into small pieces. In a mixing bowl, mash the ripe avocado. Add the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth.
