1 ripe avocado

1 medium ripe mango, peeled and diced

1 can (15 oz) chickpeas, drained and rinsed

1 cup baby spinach or mixed greens

½ red bell pepper, thinly sliced

¼ cup red onion, thinly sliced

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

1 teaspoon cumin

Salt and pepper to taste

4 large whole wheat or spinach wraps

Optional: hot sauce or chili flakes for added spice

Prepare the Chickpeas: In a medium bowl, mash half of the chickpeas with a fork until mostly smooth. This will add a creamy texture to your wraps. Leave the other half whole for added crunch.

    Combine the Ingredients: To the mashed chickpeas, add the diced mango, sliced red bell pepper, red onion, cilantro, lime juice, cumin, salt, and pepper. Gently mix the ingredients using a spatula until well combined.

      Prepare the Wraps: Lay out your wraps on a clean surface. Place a handful of baby spinach or mixed greens in the center of each wrap, followed by a generous amount of the chickpea and mango mixture.

        Add the Avocado: Slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin slices and layer it on top of the chickpea mixture for added creaminess.
