1 medium zucchini (about 1 cup grated)

1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup granulated sugar

1/2 cup unsweetened applesauce

1/4 cup coconut oil (melted)

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chocolate chips (or raisins for a healthier option)

Optional: 1/4 cup chopped walnuts or pecans

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchini using a box grater or a food processor. Squeeze out excess moisture using a clean kitchen towel or paper towels, ensuring it's dry but still retains some moisture.

      Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, granulated sugar, baking soda, ground cinnamon, nutmeg, and salt. Whisk them together until well combined.

        Combine Wet Ingredients: In another bowl, combine the grated zucchini, applesauce, melted coconut oil, and vanilla extract. Mix until smooth and fully incorporated.

          Combine Mixtures: Add the wet mixture into the dry mixture, stirring until just combined. Be careful not to overmix. Fold in the chocolate chips and nuts, if using.

            Shape Cookies: Using a tablespoon, scoop out portions of the cookie dough and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the centers look just set.

                Cool: Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely.
