Bacon and Cheddar Breakfast Burritos

6 large eggs

1/4 cup milk

Salt and pepper to taste

8 slices of bacon

1 cup shredded sharp cheddar cheese

4 large flour tortillas (10-inch)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1 avocado, sliced

Salsa for serving (optional)

Cooking spray or olive oil for frying

Prepare the Bacon: In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon strips and place them on a paper towel to drain excess grease. Once cooled, crumble the bacon into bite-sized pieces.

    Whisk Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well blended and slightly frothy.

      Cook the Egg Mixture: In the same skillet used for the bacon (drain excess grease if needed), add a little cooking spray or olive oil over medium heat. Pour in the egg mixture and gently stir with a spatula until the eggs are scrambled and fully cooked but still soft. Remove from heat.

        Add Cheddar and Vegetables: Stir in the crumbled bacon, shredded cheddar cheese, diced bell peppers, and green onions into the scrambled eggs until everything is evenly mixed and the cheese begins to melt.

          Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon about 1/4 of the egg and cheese mixture in the center, then top with a few slices of avocado. Fold the sides of the tortilla inward and then roll it up from the bottom to the top to enclose the filling. Repeat with remaining tortillas.

            Brown the Burritos (optional): Return the skillet to medium heat. Place the burritos seam side down in the skillet, and cook for 2-3 minutes on each side until golden brown and slightly crispy.

              Serve: Cut the burritos in half and serve immediately with salsa on the side if desired.
