4 slices of thick-cut bacon

1 ripe avocado, halved and pitted

2 large eggs

2 slices of your favorite bread (sourdough or whole grain work well)

1 tablespoon mayonnaise (optional)

1 teaspoon lemon juice

Salt and pepper to taste

A handful of fresh arugula or spinach (for added greens)

Olive oil or butter for frying

Cook the Bacon: In a skillet over medium heat, cook the slices of bacon until crispy, about 6-8 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess fat.
