4 boneless, skinless chicken breasts

8 slices of bacon

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup spinach, chopped (fresh or frozen)

1 tsp garlic powder

1 tsp onion powder

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1 tbsp olive oil

Toothpicks or kitchen twine for wrapping

Instructions
 

Preheat oven: Preheat your oven to 375°F (190°C).

    Prepare the filling: In a medium bowl, combine the mozzarella cheese, cream cheese, chopped spinach, garlic powder, onion powder, dried herbs, salt, and pepper. Mix until well combined and set aside.

      Prepare the chicken: Place each chicken breast between two pieces of plastic wrap or parchment paper. Using a meat mallet, pound the chicken breasts to an even thickness, about ½ inch thick. This helps them cook evenly.

        Stuff the chicken: Take a portion of the filling (about 1/4 cup) and place it in the center of each chicken breast. Fold the sides of the chicken over the filling and roll it up tightly. Secure each roll with toothpicks or tie them with kitchen twine.

          Wrap in bacon: Pre-cook the bacon in a skillet over medium heat for about 2-3 minutes until just starting to render fat but not completely cooked. Take each chicken roll and wrap the pre-cooked bacon slices around the chicken, securing them with toothpicks. Ensure that the ends of the bacon overlap to prevent the filling from leaking out.
