Ingredients

8 whole hot dogs (beef, turkey, or veggie)

2 cups all-purpose flour

1 tablespoon granulated sugar

1 teaspoon salt

1 teaspoon active dry yeast

3/4 cup warm water (110°F)

1 tablespoon baking soda

1 egg (for egg wash)

Coarse sea salt (for sprinkling)

Optional toppings: Everything bagel seasoning, sesame seeds, poppy seeds

Instructions

Prepare the Dough:

    - In a small bowl, combine warm water and sugar, then sprinkle the yeast on top. Let it sit for about 5 minutes until frothy.

      - In a large mixing bowl, combine the flour and salt. Pour the yeast mixture into the flour and stir until a dough forms.

        Knead the Dough:

          - Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

Preheat Oven and Prepare Baking Soda Bath:

              - Preheat the oven to 425°F (220°C). Prepare a large pot with water and bring it to a gentle boil, then add the baking soda to the boiling water (this will create a lye-based bath for the bagel dogs).

                Shape the Bagel Dogs:

                  - Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope about 1/2 inch thick. Wrap each dough rope around a hot dog, ensuring it covers the dog well and overlaps slightly.

                    Boil the Bagel Dogs:

                      - Carefully place each wrapped hot dog into the boiling baking soda water (2-3 at a time), boiling them for 30 seconds each. Remove with a slotted spoon and transfer to a lined baking sheet.

                        Egg Wash and Season:

                          - Beat the egg in a small bowl and brush the mixture over each bagel dog. Sprinkle coarse sea salt and any optional toppings you desire (like sesame seeds or everything bagel seasoning).

                            Bake:

                              - Bake the bagel dogs in the preheated oven for 15-20 minutes, or until golden brown. Allow to cool slightly before serving.

                                Serve and Enjoy:

                                  - Serve your delicious bagel dogs with mustard, ketchup, or your favorite dipping sauce. Enjoy them warm!
